The research developed a novel puffed extruded snack incorporated from minced fish and corn grits. Incorporation of fish muscle meet in ingredients of the conventional corn or cheese snacks improved the nutritional properties, while keeping its storage stability and consumer acceptance. The outcome of the study commercialized under the brand name of PUFFISH in 2009
